Soy contains 18% fat and 43-49% protein. Soy meal is by far the most important source of vegetable protein. Properly toasted soy meal is roasted for half an hour at 110 degrees, in order to destroy the trypsin(*) inhibiting substances. This roasting has the beneficial side effect of giving it a lovely nutty scent. Indispensable in good bird food recipes, because of its beautiful amino acid pattern, as well as the wealth of unsaturated fatty acids.
* Trypsin is an enzyme that breaks down dietary proteins into small substances (amino acids). These amino acids are absorbed by the blood for the building of new proteins.
