Tigernuts contain about 25% fat, 30% starch and 7% protein. The fat consists largely of unsaturated fatty acids, such as oleic acid and linoleic acid. Tigernuts catch carp! The finely ground flour variant of this super-particle is also gaining more and more popularity. This is due to the beautiful amino acid pattern of the flour and the flavour enhancing effect.
